Ollie Dabbous
Executive Chef

Ollie Dabbous is the co-founder & executive chef of HIDE restaurant in Piccadilly. Previously the Michelin-starred chef/owner of the highly esteemed restaurant, Dabbous.

Previously, Ollie has worked at Le Manoir aux Quat' Saisons, Hibiscus, Mugaritz, Noma, L’Astrance, The Fat Duck, WD-50, Pierre Gagnaire and Texture before opening HIDE in 2018 & Hideaway in 2020.

Most recently, he has cooked at Royal Ascot and at bespoke events for Krug, Nyetimber & Devialet. He is also currently working on his second
cookery book.

a fine wine and spirits boutique which has become the most talked about wine project of recent times and
a mecca for wine and spirit lovers alike..

Since 2012, Hedonism has won many awards for their selection of wines and spirits,
as well as for their customer service. Hedonism Wines is now delighted to be curating the wine lists for both
HIDE & Hideaway and allows you to order from the shop’s vast selection order while dining for the wine
to be delivered to your table straight from the store.

HIDE Restaurant

HIDE is a joint project between Hedonism Wines & Ollie Dabbous.
Opened in April 2018, within six months it had been awarded a Michelin star
as well as a coveted five stars in the Evening Standard.

Located at 85 Piccadilly, HIDE enjoys incredible views over Green Park and offers a relaxed and
holistic setting in which to savour seasonal cooking at its best, complemented by the UK’s most comprehensive
wine list and including two restaurants, a cocktail bar & five private dining spaces.

Studio Caché is boutique design studio specialising in interiors, events and branding.
The company was founded by Tatiana Fokina and is based in London. As Artistic Director, Tatiana leads
a small team of designers and project managers with experience and ability to deliver a diverse and
creative portfolio of projects internationally.

Attention to detail forms the core of our design ethos and each project is a collaborative journey with our clients.
We encourage you to participate across all stages of the creative process, thus creating unique, highly personal design outcomes.
Our team hand pick all furniture and fittings, and fully oversee the execution of the work by contractors to ensure
that the final outcome is of the highest possible quality.

We select only the best materials, with an emphasis on locally sourced items.
Our designs are playful, quirky and above all, timeless.

Paula Gomez Sanchez

Restaurant Manager

Born in Elche (Spain). I always had passion for leadership, management and service. I started in the sport industry, as I used to play tennis professionally. I moved to London in 2013 and I realised hospitality is also my passion, taking care of guests as well as of my team. 

I was part of the opening team at HIDE. I started as a chef the rang and thanks to the trust they put in me and hard work I became Assistant Restaurant Manager after two years. 

Opening Hideaway was very exciting, a new challenge. I was trusted to manage it myself, and I couldn’t be happier with the opportunity.

My aim is to build an exceptional team, charismatic, knowledgeable, who exceed our guests expectations. High standards are something I believe should always be kept.

Stacey Barber 

Head of Coffee

Originally from Essex, Stacey moved to London to follow her passion for coffee and tea after visiting coffee farms in Costa Rica. She has trained at Harris and Hoole, Union Hand Roasters and Climpson and Sons, all London-based speciality coffee roasters who are now our exclusive roasters for Hideaway.
